Today I offer you a salty pie. This pie is a real delight with a very perfumed shortbread and a filling melting and tasty !!! For this recipe I found inspiration at Carole site Alter Gusto. Thank you for this sharing is a real treat!
For a pie 22 to 24 cm in diameter
Ingredients:
For the dough:
- 120 gr of spelled flour
- 30 gr of complete rice flour
- 50 gr of almond powder
- 1 teaspoon of salt
- 1 teaspoon of baking powder
- 8 cl of a mixture of water and white wine (2/3 wine, 1/3 water)
- 4 cl of olive oil
- For garnish :
- 4 leek whites
- 1 big egg
- 20 cl of liquid soy cream
- 5 cl of white wine
- 60 g grated grated Parmesan cheese
- 1 teaspoon of curry powder
- 30 g crushed nuts + some whole nuts for decoration
Preparation:
For the dough:
- In a salad bowl, whisk the spelled flour, the whole rice flour, the almond powder, the baking powder and the salt. Dig a well and pour in the white wine, water and olive oil. Mix until you get a ball of dough.
- Place the dough between two sheets of parchment paper and spread it out. Then garnish your pie pan (22 to 24 cm in diameter) with the dough. Prick the pie shell and place in the oven. Pre-cook for 10 minutes at 180 °.
- For garnish :
- Finely chop your leeks and wash them thoroughly.
- Place your leeks in a saute pan and sauté them in a bottom of olive oil. Deglaze with white wine, sprinkle with curry, reduce heat and continue cooking for 15 to 20 minutes under cover. Stir regularly.
- Whip the egg with the cream and add the Parmesan cheese. Stir in melting leeks and crushed nuts.
- Pour this mixture onto the pie shell and place in the oven. Cover with some walnut kernels.
- Place in the oven and bake for about 35 minutes at 180 °.
